Chi (also spelled Qi) translates roughly to "vital energy" in Chinese. It refers to the "life force" that flows through all plants, animals and human beings. "Chi" is that "bio-electricity" or "energy" in the body which makes us "alive."  It is also that life giving energy that permeates our universe.

You may know us as the "gluten free girls"!  

Well, we are back! With more health and wellness to share!

We began one of the first gluten free baked good manufacturing plants in the USA. 

Our mom, Penny, was diagnosed with Celiac Disease (autoimmune disease which is triggered by gluten - the protein found in wheat, rye, barley and some oats).  We found through her support group that there were millions of people with gluten intolerance (1 in 100 Americans)  yet no good tasting food for them on the market. 

As you know, people are born with Celiac Disease.  It can show a variety of symptoms or none at all.  Symptoms vary and change.  Very difficult to diagnose.
 
My child suffered with several symptoms since he was born until he was finally diagnosed at 18 yrs old. I kept bringing my baby to the Dr. (crying, constipation, diarreha, headaches, throwing up) and told nothing was wrong. I changed formulas several times.  Crying was blamed on colic - but a mother knows when something else is wrong.  Then as he grew older, headaches were blamed on ice hockey, behavior and inability to concentrate, restlessness, insomnia was blamed on "normal" teenage behavior. All was triggered by gluten - the body was attacking itself in different ways and different organs not knowing where the "poison" was coming from. 
 
EVERY baby (and adult!) should  be tested - not only for active Celiac Disease but for the Celiac Disease gene. It is a simple blood test. Parents should insist it!   But keep in mind, also that Celiac Disease is commonly undiagnosed because if the child is tested and unsymptomatic then it may come out negative.

We are advised not to introduce peanuts to baby's diet due to the possibiility of triggering allergies.  The same is now said of other foods.   It is advised that common ingredients/foods that may trigger allergies should be held off for a few years before introducing in a babies diet - wheat, soy, peanuts, etc. Yet most baby foods and formulas are made from these foods.  Processed baby food and wheat cereal is one of the first things we give our babies - yet is it the healthiest?

We began GLP Free Manufacturing with our famous brownie.  The brownie was featured in Health Magazine as Best New Product and it was the very first gluten free item at DISNEY WORLD!  Next, we began manufacturing our rolls - soft and delicious - nothing like it.   (Stagnito's Best New Product)

We donated our rolls to Autistic Children's Camps where the children would be so happy to eat a gluten free roll that looked and tasted "normal" - like other kids! (Same for our pizza crust!)  When asked "What do you want on your hamburger" , the children would answer, "A ROLL".   People called us from all over the country for our products with tears of joy!

We grew so quickly, we sold the assets of our company to Rich Products Corp. who now sells our gluten free products (and more!) under the French Meadow label.  www.frenchmeadow.com

"The beautiful life"  that we all want to obtain begins with our health.  Thus, the ultimate seed of nutrition - CHIA. 

As my grandmother would say, "No matter what happens in life, be thankful for your health." 

We originally became interested in the benefits of Chia because some members of our family, my mother and son, were diagnosed with CELIAC DISEASE. 

This is an autoimmune disease that is triggered by the intake of gluten. 
When gone undiagnosed (which many are in the USA) this disease causes malnutrition. 

Chia can be an easy way to boost nutrition to a depleted system.   

I come from a large extended Italian family who love to bake, cook and especially eat! (We celebrate with food from St. Joseph's Day to St. Lucy's Day!) 

Food is a part of socializing, celebrating and family.  Food is not only about nutrition but about pleasure.  We understand that at Bella Chi Corp.   Chia can easily be added into your daily diet to allow food to not only satisfy you but SERVE you.

My sister, Joan Panepinto is a Registered Nurse and Registered Dietician.  She reminds us that "this is the only body you are getting. It is not a dress rehearsal. Treat it kindly it will serve you well as you age."

We DO get pleasure out of food - it isn't about depravation - it about healthy choices that you enjoy that bring you to a level of optimal level of functioning.

My sister also often lectures and reminds us that "Americans are not thinking optimal level of functioning - sadly, it is about immediate gratification. Treat your vessel kindly. Build a strong vessel to carry you through life. The body is a temple. You can enjoy delicious foods and have sensory pleasure without damaging your body but nourishing it."

If your family is like ours, we celebrate and share ourselves and families with food. 

Cooking, baking and preparing our meals together has been a family tradition.  It is about handing down recipes from generation to generation (usually not written - a handful of this, a pinch of that), showing our gratitude and love with "sharing" a dish, making extra in case someone stops by......
AND, always having a pot of sauce on the stove on Sundays........

My 11 year old maltese, Snowball, loves chia. I sprinkle it on his dry food with a little water and he runs to his dish!
The Omega 3's and antioxidants are great for his coat and bones too.
