My mother was diagnosed with celiac disease about 6 years ago. The physical changes in her diet were difficult coming from an Italian family who likes pasta, bread and pastries. But the emotional part was even more difficult. I could only imagine how excluded and alienated my mother felt when we had family get togethers - which in our family is every weekend!
When I saw the tears in my mother's eyes, as birthday cake was being served and she couldn't eat any, I decided I had to do something. This began my quest to help celiacs in any way I can. It began with starting a gluten free baked good company.
I never expected to move my career from working for my family's demolition company to a food manufacturing company but I believe God led me and guided me to this mission and I followed....learning as I went from many angels that were put in my path.
After 2 years I was led to teaching a major food manufacturing company about gluten free in which one of the owners has celiac disease unbeknownst to the employees of the company. Then I realized that "Goodies" brought pleasure to celiacs but not much nutrition. Celiacs are depleted of nutrition and needed more.
Now my journey continues with the discovery of Chia - a gluten free grain loaded with nutrition. Many beautiful people have helped me continue to learn and grow. Chia has and will help so many - not only celiacs but everyone!
A year ago, my 17 year old son was diagnosed with celiac disease. He was an honors student. He had no gastrointestinal symptoms - only migraines, insomnia, sudden inability to concentrate, nervousness, etc. I brought him to a psychiatrist who after one appt told me, "If you would have brought him to any other doctor, he would have been prescribed a bi-polar medication or ADD meds. But I know that he needs a medical doctor instead. Something is attacking his brain."
Only thru the Grace of God was my son diagnosed. I didn't even suspect celiac disease. A teenager with those symptoms seemed common. But with a full physical, blood work and biopsy, celiac disease was clearly diagnosed.
I am determined now to spread the word about having your teen tested for celiac disease if he/she has any symptoms. I can't imagine how many children are taking unnecessary meds due to not being properly diagnosed. It can easily be added in your routine blood work.
Omega 3 Chia is loaded with nutrition and fiber and it helps many even those without celiac disease.

Gluten Free Flour can be made using brown rice flour and chia. Works wonderfully as 1:1 to wheat flour.
